OUR MOLE

Passed down through family generations in the region of Puebla Mexico. The story of our mole first started out with over 40 ingredients, then was cut down to 26. Now it has 22 ingredients- making it gluten free, peanut free, almond free, sesame seed free, soy free and vegan.

Mole poblano is a famous sauce known all over the world, a sweet, spicy, and salty sauce. We make our mole sauce from scratch, so you can have a rich mole sauce like the ones shared in our family in Puebla Mexico. From chiles, to plantains and chocolate, how this magical sauce came to be will never truly be known. We are proud to share our rich family sauce :).

DIRECTIONS in making mole paste into mole sauce

  1. Pour mole paste into pot

  2. Add the exact amount of either water or broth to the amount of mole placed in the pot

  3. Mix together for about 3-5 minutes or until mole paste breaks down and starts to boil - then your sauce will be complete.

  4. Mix thoroughly

    After the mole paste is made into mole sauce, the sauce will be good for 8 days in the fridge!!!!!

RECIPE 1

Ingredients

MOLE ENCIHILADAS

Ingredients

- 1 ABUELA’S MOLE PASTE  ( 9 OZ MOLE PASTE)
2-3 CHICKEN BREAST
1 SLICED ONION
1 GARLIC CLOVE
1 TEASPOON OF SALT
6-12 TORTILLAS
1 SPOON OF OIL

 OPTIONAL GARNISH
1 AVOCADO/ SLICED
SLICES OF ONIONS
1-2  RADISHES/ SLICED

1 JAR OF ABUELA’S MOLE PASTE;  SAUTE FOR 2-3 MINUTES, THEN ADD THE EXACT AMOUNT OF EITHER WATER OR BROTH TO THE AMOUNT OF MOLE PLACED IN THE POT. MIX TOGETHER FOR ABOUT 3-5 MINUTES OR UNTIL MOLE PASTE BREAKS DOWN - THEN YOUR SAUCE WILL BE COMPLETE, MIX THOROUGHLY.



In a pot put the chicken breasts in to boil with water; add slices of onions, some garlic and salt.
Boil for 20-25 minutes to cook well.
Remove the chicken breast from the pot, and put the chicken breast out on a plate for the chicken to cool down. Let the chicken cool down, then tear apart the chicken breast with your hands until its shredded chicken.

In another  pan add the 1 small spoon full of oil, heat the tortillas one by one on low heat. Flipping them side to side for no more than a minute on each tortilla. If you need to add more oil, add more oil.

Preparing your enchiladas;
lay your tortilla on a plate, add the crumbled chicken on top of the tortilla like your about to make a taco. Then roll the tortilla with the chicken in the middle like a flute. Do this with the rest of the tortillas, place the rolled tortillas on a plate and pour the warm mole sauce on top. Then garnished with sliced onions, radishes and avocado.

Ingredients

-Either red or green salsa

-tortilla chips

- avacados

-onions

  • cheese ( optional)

  • Sunnyside egg on top ( optional)

  • Steak ( optional)

    Directions

  • Easy as 1 , 2 and 3

  • 1 - warm up either salsa with a little water , 3 to 1 or 4 to 1 ration salsa to water. Warm up until the salsa starts to boiling.

  • 2 - lay tortilla chips on a plate, pour salsa over tortilla chips.

  • 3 - top with sliced onions, sliced avocados, ( cheese optional), (sunnyside egg optional), (steak optional)
